The very first recipe for pancakes consisted of just two ingredients: flour and water. In fact, these were ordinary cakes that were baked in the oven and served with various fillings. A little later, eggs, sugar, and butter were added to the pancake dough, which led to the emergence of a classic recipe for delicious, tender, openwork and beloved by all pancakes.
Stage 1
Prepare the ingredients: an hour before cooking pancakes, take milk, eggs and vegetable oil out of the refrigerator. All dough ingredients should be at room temperature.
Stage 2
Break eggs into a deep bowl, add sugar, salt and mix thoroughly until smooth with a whisk. Sugar is an indispensable ingredient even for the preparation of savory pastries, as it is responsible for an appetizing golden crust.
Stage 3
As soon as the sugar and salt are completely dissolved, and a light foam appears on the surface, pour in half the milk at room temperature. To make the dough easy to knead, you can preheat the milk in the microwave for 15-20 seconds.
Stage 4
Add half the flour and continue to stir the dough until the lumps are completely dissolved. Sift the flour beforehand, saturation with oxygen will allow you to get thin openwork pancakes with a lot of holes.
Stage 5
As soon as the dough becomes homogeneous, pour in the second half of the milk and add the rest of the flour. Such a step-by-step preparation will greatly simplify the process of mixing and breaking lumps, making the dough tender and airy.

Cover bowl with a clean towel and let rest for 20 minutes. This time is necessary for the "swelling" of gluten, which will make thin pancakes elastic. This is especially important if the pancakes will be stuffed with stuffing.
Stage 7
After 20 minutes, add vegetable oil to the pancake dough and mix thoroughly. According to the recipe for thin openwork pancakes, the consistency of the dough should resemble thick cream.
Stage 8
Heat a frying pan over high heat and brush the surface with vegetable oil. It is more convenient to do this with a silicone brush.
Stage 9
Reduce the heat to medium and spread the batter evenly over the surface of the pan. Bake thin pancakes on both sides until golden brown.

Preheat the pan to maximum heat and grease. Before preparing each new pancake, mix the dough with a ladle, and grease the pan a little with oil. Fold the finished pancakes in a pile, as in the photo.
