Young green sorrel is the first green that symbolizes the beginning of the summer season. Its fresh taste with a slight sourness is familiar to many since childhood thanks to the traditional sorrel soup.

Rinse the sorrel and mint and finely chop. Add three tablespoons of sugar and knead with your hands to make the leaves softer. Leave for 10 minutes.

In another bowl, whisk together eggs, 100 g sugar and a pinch of salt. Add milk, vegetable oil and mix thoroughly.
